Ingredients

  • 300.00 g Concord Grape
  • 7.50 g Kosher Salt - 2.5% by weight

Instructions

  1. Destem your grapes. Be thorough!
  2. Wash your grapes by soaking in a bowl. Grape debris will rinse off and rise to the top of the water.
  3. Weigh and tare your fermentation container, and put your grapes in there.
  4. Weigh your grapes, and calculate 2.5% weight for your salt.
  5. Add salt. Stir your grapes around a bit in there.
  6. Smush the grapes down. Ideally, you've popped each grape just a little bit.
  7. Put on your fermentation weight and seal.
  8. Monitor for the next 12 hours or so to make sure the grapes are giving off enough liquid to submerge all grapes fully. If not, add 2.5% brine to cover.
  9. Let it ferment, and enjoy!
