Ingredients
- 300.00 g Concord Grape
- 7.50 g Kosher Salt - 2.5% by weight
Instructions
- Destem your grapes. Be thorough!
- Wash your grapes by soaking in a bowl. Grape debris will rinse off and rise to the top of the water.
- Weigh and tare your fermentation container, and put your grapes in there.
- Weigh your grapes, and calculate 2.5% weight for your salt.
- Add salt. Stir your grapes around a bit in there.
- Smush the grapes down. Ideally, you've popped each grape just a little bit.
- Put on your fermentation weight and seal.
- Monitor for the next 12 hours or so to make sure the grapes are giving off enough liquid to submerge all grapes fully. If not, add 2.5% brine to cover.
- Let it ferment, and enjoy!
